In continuation of my letter No.9454/1907

dated 22nd October, I am directed to inform you that all hams exported from Hong Kong under cover of the Colonial Veterinary Surgeon's signature are those which have been cured and packed in licensed factories under the direct and constant supervision of the Colonial Veterinary Surgeon and his trained staff; and moreover that the only pork which may be used in such factories is from pigs slaughtered in the Government abattoirs where ante-mortem and post-mortem examinations are invariably conducted. The statement in the enclosure to your letter to the effect that Shanghai is the only place in China having a sufficient system of meat inspection may be true, but the innuendo against the British Colony of Hong Kong is, as has been explained, wholly undeserved.

As regards the separate suggestion that certain uncertificated or even condemned hams originating from Shanghai have been sent to the Philippine Islands through this Colony I am to inform you that on several occasions lately the Colonial Veterinary Surgeon has been
